Food Safety - Hazard Analysis and Critical Control Points (HACCP) - Guidance for caterers and retailers (Safer Food Better Business Pack)
With the introduction of the Regulation (EC) 852/2004, Article 5, all food businesses must implement a procedure based on HACCP (Hazard Analysis Critical Control Points) principles.
What is HACCP?
HACCP is a food safety management system that is used to identify CCP’s (Critical Control Points) within the food production and preparation processes. This is with the aim of recognising the food safety hazards that exist and implementing measures to reduce or eliminate the hazard being realised. The amount of documentation and detail needed in a HACCP document should be proportionate to the size and nature of the food business.
A typical CCP for a food business could be the storage of food. If some foods are not kept in refrigerated conditions below 08°C the food will spoil and food poisoning bacteria will multiply at a faster rate. This will increase the risk of the food being injurious to health.
Therefore this CCP will need to be controlled, monitored and documented and measures should be established stating the corrective actions carried out if this process breaks down.
The Safer Food Better Business Pack
To help food establishments meet the requirements of the Regulation (EC) 178/2002 The Food Standards Agency has introduced The Safer Food Better Business Pack. This pack can help caterers and retailers to implement a procedure based on the HACCP procedures.
The Safer Food Better Business Pack can be downloaded for free from the Food Standards Agency (FSA) website. This pack can be used as an efficient food safety management tool for caterers and retailers.
